The Chester is having its Grand opening this week so my friend Brain Mazza, VP of Paige Hospitality, sent out this release to inform everyone of this much anticipated event:

Chef Sam Hazen and Paige Hospitality Group partner to bring the Meatpacking District a decadent American brasserie

New York, NY– September 2013 – This fall, Paige Hospitality Group will open The Chester inside the Gansevoort Meatpacking NYC hotel with Executive Chef Sam Hazen (Veritas). The American eatery and bar is set to open in early September, serving breakfast, lunch and dinner daily, and brunch on weekends. With 150 seats outside and another 150 seats spanning across two levels inside, The Chester will also encompass the lobby bar inside the hotel and will provide 24/7 room service and banqueting services, as well as food for the Plunge Rooftop Bar + Lounge.

Renowned Chef Sam Hazen, who earned three stars at Veritas from The New York Times, will bring his extensive experience to The Chester to execute a menu of brasserie classics. Chef Sam will be accompanied by Chef de Cuisine Joe Tellus, who worked as his sous chef at Tao New York and Las Vegas. The duo will create traditional American dishes such as Montauk Pearl Oysters with Tabasco Mignonette; Roasted Chicken with Bone Marrow Mushroom Bread Pudding, Maple Brined Berkshire Pork Chop with Sweet Onions and Lardo Wrapped Apples and 45 Day Aged Creek Stone Farms 20 oz. Sirloin. There will also be an extensive bar menu, available until 4:00am Thursday through Saturday, providing an invaluable resource for those looking for quality dining options later in the evening. In the morning, breakfast and brunch options will include Raised Waffles with Maple Ice Cream and Blueberry Syrup, Butter Poached Lobster and Crab Meat Benedict and The Chester Skillet with Chicken Sausage, Herb Roasted Potatoes, Roasted Tomatoes, Cheddar and a Fried Egg.

With multiple rooms and levels, the restaurant can accommodate a variety of guests. The dining room, with its antique subway tiled walls and spacious ceilings, combines a rustic aesthetic with modern sophistication. The mezzanine level is accented with walnut tabletops and sharply contrasting olive leather couches to create a contemporary atmosphere. The outdoor decks have been expanded and revamped with plush banquettes and throw pillows, highlighting what is already the busiest corner in NYC,
